Recipe: Quick, high-protein healthy breakfast on-the-go
This one’s a two-fer. First, one of my all-time favorite quick and easy, but delicious, breakfasts:
Avocado melt on toast
1 whole wheat english muffin, or 2 slices Ezekiel bread – toasted
1/2 avocado, sliced and mashed slightly onto toast
1/2 tomato, sliced and placed on top of avocado
1 oz lowfat cheese or veggie shreds soy “cheese” – divided [...]
Recipe: Chicken Soup from leftovers found in the fridge
This is my alternate Chicken Soup recipe. My primary recipe can be found here.
I make a point to always have a chicken carcass in the freezer. It’s fairly easy to accomplish this – even the pre-made roasted chickens at the grocery store will work. Once you’ve finished the chicken you’re going to eat, let [...]
Fighting through the “yuck” feeling
Today I felt like I was coming down with a cold. I had a sore throat, was feeling weak and my arms and legs were achy, like I was fighting something. My head was congested and I had a sinus headache.
Then my boss told me to go home, as I’ve been working very hard [...]
Recipe: Tuna-Cucumber Salad with Miso Dressing
This is a ridiculously easy recipe, and is a bit of a takeoff on the “Chinese Chicken Salad” (which was not even a little bit Chinese) all the moms used to bring to potlucks when I was a kid in the 70’s.
Salad:
10 oz solid white albacore, packed in water – or fresh tuna, cooked and [...]
More Progress
While the scale is still not moving (argh! Though I know that will eventually change…) I am still making progress. A lot of it.
When I began working with my trainer, I could just barely last 3 minutes on the stationary bike.
Now I ride 30 min every single weekday, and first thing next week [...]
Attitude Adjustment
I was feeling a bit discouraged earlier in the week, because the scale hasn’t been moving much.
Thursday changed my mind. I went to the gym at work and I set the bike at the gym for 15 min. After 15 was up I was still feeling good, so I kept going and ended up [...]
Results!!
I thought my pants were feeling a little looser, so I did some measuring today.
In four weeks I have lost 8 pounds, and 14.5 inches. This includes 2″ off my waist and 3″ off my hips!
I’ve also increased my endurance dramatically. When I started this, walking a mile and a half was hard. Riding the [...]
Costco
Costco run completed. We hadn’t grocery shopped in weeks, and had been out of basics like canned tomato sauce for months.
Our house is now filled to the brim with healthy food and a few healthy snacks.
Time elapsed from walking out the door of home to taking out the last of the garbage generated by [...]
Vacation Update
I love and hate vacations.
We went to the beach for a week with a large group of people. Food choices were limited, though relatively healthy. However, I have a hard time not getting “vacation mindset” where I think nothing I eat really counts.
All in all I came home with:
* a stress fracture in [...]
Recipe: Curried Celery Soup
I made this last night for dinner, as we came home from vacation with 4 giant heads of celery. I’ll likely be posting some celery recipes over the next few days as I find good ways to use it all up.
1 large head celery, chopped
1 head garlic, minced and smashed to a paste with sea [...]
